Peterson is highlighting Georgia's potential in the aquaculture industry by harvesting caviar from farm-raised Siberian sturgeon. His cost-effective and environmentally sustainable method of farming could protect Georgia’s four native species in the wild while creating a lucrative commodity for the state.
